Mixing Veggies With Meat

Most kids love fried chicken and burgers but shy away from vegetable dishes. One of the solutions to this challenge, encountered by many parents, is to incorporate mixed vegetables to their favourite meat dishes.

In preparing meat patties, it is always a good idea to mix cut up vegetables for a number of reasons:

  1. It increases the nutritional value of the dish.
  2. It is more cost effective since you do not have to spend much on meat ingredients.
  3. Some vegetables make dish juicier and may even serve as a binder because of its natural moisture content.
  4. Combining meat and vegetable can provide a delicious texture and flavour to your dish. COOKMUNITY® made this Mixed Veggie Kiddie Patties recipe to highlight how vegetables can be a great addition to a meat dish. This healthy veggie recipe uses chicken breast, which contains leaner protein and less saturated fat and cholesterol as compared to the other parts of the chicken, hence making it a better meat choice. But since lean meat lacks fat, it has a tendency to be tough and dry, to address this, try adding vegetables to make this dish more appetizing and flavorful.

To make this dish, you would need grated cucumber and broccoli florets, finely chopped bell peppers and chicken breast, all-purpose flour, large egg, CRISPY FRY® Seasoned Crumbs, cooking oil and chopped spring onions.

The procedure is simple, just add the cucumber, broccoli, bell peppers, chicken, flour and egg in a bowl. Mix the ingredients well then shape into mini patties. Chill for a few minutes. Place CRISPY FRY® Seasoned Crumbs in a platter, then dredge the patties one at a time until fully coated. CRISPY FRY® Seasoned Crumbs will provide a crunchy coating and seal in the moisture to retain juiciness of the patties when frying.

The last step is to fry the patties on both sides until golden brown and drain excess oil using a strainer or colander. Serve with ketchups or dips and/or add spring onions on top as garnish.
