Ampalaya with Pork and Eggs

AJI-NO-MOTO® Umami Seasoning

Ingredients

  • 3 Tbsps. (45ml) Cooking oil
  • 1 cup (250g) Pork strips
  • 1/4 cup (30g) Red onion, chopped
  • 2 Tbsps. (20g) Garlic, chopped
  • 1/2 cup (120g) Tomato, sliced
  • 3 cups (300g) Ampalaya
  • 1/2 cup (125ml) Water
  • 1 1/2 tsps. (7.5ml) Fish sauce
  • 1/2 pack (5.5g) AJI-NO-MOTO® Umami Seasoning
  • 1/4 tsp (0.5g) Black pepper, ground
  • 2 pcs (120g) Eggs

Procedure

  1. SAUTÉ. In a pan heat oil. Saute pork strips. Once pork turns light brown, add onions, garlic, and tomatoes, and cook until fragrant. Add amplaya and continue sauteeing for 3 minutes. Add water.
  2. SEASON. Add fish sauce, AJI-NO-MOTO®, and pepper. Mix well and cook for another minute. Add eggs, mix well and cook for another minute.
  3. SERVE. Transfer to a serving plate Serve and enjoy.

Cooking Tips

To reduce the bitterness of ampalaya, slice it and rinse well with water. It's optional to rub with salt or soak it in salted water because nutrients from the ampalaya will be removed as well.
