Asian Salad with Oyster Sauce Dressing Recipe

SARSAYA® Oyster Sauce

Ingredients

Salad Dressing:
  • 1 pack (30g) SARSAYA® Oyster Sauce
  • 1/2 cup (100ml) Vinegar, cane
  • 1 Tbsp. (10g) Garlic, finely minced
  • 1/8 cup (40g) White sugar
  • 2 tsps. (10ml) Sesame oil
  • 6 Tbsps. (80ml) Corn oil
Chicken:
  • 2 Tbsps. (30g) Salad dressing
  • 1 pack (30g) SARSAYA® Oyster Sauce
  • 2 tsps. (5g) Coriander leaves, chopped
  • 1 cup (200g) Chicken breast, filleted
  • 2 tsps. (10ml) Soy sauce
Vegetables:
  • 3 heads (400g) Lettuce leaves, cut into bite-size pieces
  • 1 pc. (200g) Cucumber, medium-size, peeled, seeded and cut into sticks
  • 1 cup (100g) Carrots, cut into thin sticks
  • 1/4 cup (40g) Singkamas, cut into sticks
  • 1/2 cup (75g) Red bell pepper, cut into sticks
  • 1/2 cup (70g) Tomatoes, seeded, cut into wedges
  • 1 cup (150g) Fresh oranges, peeled, segmented
  • 1 Tbsp. (10g) Sesame seeds, toasted

Procedure

  1. MIX. To prepare the dressing, combine SARSAYA® Oyster Sauce, vinegar, garlic and sugar in a bowl. Drizzle corn oil and sesame oil while whisking continuously. Set aside.
  2. MARINATE. To marinate the chicken, combine salad dressing, SARSAYA® Oyster Sauce, soy sauce and coriander leaves in a bowl. Add chicken fillet, mix well and marinate for at least 2 hours.
  3. GRILL & SLICE. In pan with no oil, grill chicken for 5 minutes on each side. Let cool then slice into strips. Set aside.
  4. ASSEMBLE & SERVE. In a bowl, add lettuce leaves, cucumber, carrots, singkamas, bell pepper, and salad dressing. Toss to combine. Top with grilled chicken, tomatoes and orange segments. Garnish with toasted sesame seeds. Chill for 15 minutes before serving.

Cooking Tips

Add an Asian touch to a basic vinaigrette with the addition of oyster sauce and some sesame oil. This dressing will go well with a wide variety of salad vegetables. Add some fresh fruits for color and sweetness and even, toasted nuts or fried noodles for some crunch.
