Roasted Jackfruit

AJI-GINISA® Flavor Seasoning Mix

Ingredients

Jackfruit:
  • 2 Tbsps. (30ml) Cooking oil
  • 1/2 kilo (500g) Jackfruit (langka), unripe, sliced thinly
  • 1 cup (250ml) Water
  • 1 Tbsp. (15ml) Barbecue sauce
  • 1/4 tsp. (1.3g) Salt
  • 1 pack (8g) AJI-GINISA® Flavor Seasoning Mix
Jackfruit mixture:
  • 1/2 cup (60g) All-purpose flour
  • 1 pc. (50g) Egg, beaten
  • 2 Tbsps. (30ml) Cooking oil
  • 2 tsps. (3g) Paprika powder
  • 1 Tbsp. (15ml) Soy sauce
  • 1 Tbsp. (15g) Brown sugar
Others:
  • 2 Tbsps. (30ml) Cooking oil
  • 1/4 cup (50g) Barbecue sauce
  • 1 Tbsp. (5g) Parsley, chopped (optional)

Procedure

  1. STIR-FRY & SIMMER. In a pan, heat oil. Stir-fry jackfruit for a few minutes. Add water, barbecue sauce, salt, and AJI-GINISA®. Mix, cover, then let it simmer for 10-15 minutes until jackfruit has softened and the water has evaporated. Shred the jackfruit using two forks to get a similar texture to shredded pork. Set aside.
  2. MIX. In a bowl, combine flour, egg, cooking oil, paprika powder, soy sauce, and brown sugar. Mix well then add the shredded jackfruit.
  3. MOLD. Divide the jackfruit mixture into two then place onto foil or wax paper. Mold into 2 thick rectangles to resemble pork ribs. Wrap then cover.
  4. GRILL. On a griddle-pan or griller, heat oil. Remove the foil or wax paper then grill the jackfruit ribs for 3-4 minutes on each side. Brush it with barbecue sauce then heat on the pan for another 1-2 minutes on each side or until slightly charred.
  5. SERVE. Slice the ribs into serving pieces then transfer to a serving plate. Optional to garnish with parsley. Serve and enjoy!

Cooking Tips

You can remove the seeds and core of the jackfruit to greatly resemble shredded pork.
