Basic Paella
AJI-SHIO® Garlic Seasoning MixIngredients
- 2 Tbsps. (30ml) Olive Oil
- 1/2 cup (120g) Red bell pepper, minced
- 1/2 cup (120g) White onion, minced
- 1/4 cup (60g) Garlic, minced
- 1/2 cup (70g) Chorizo de Bilbao, sliced
- 1 1/2 cups (270g) Rice, raw
- 1/2 Tbsp. (7.5g) AJI-SHIO® Garlic Seasoning Mix
- 1 1/2 cups (375ml) Homemade shrimp stock
- 2 Tbsps. (30ml) Olive Oil
- 1/4 kilo (250g) Shrimp, deveined, shell-on, head-on, cooked
- 1/2 cup (70g) Olive, sliced
- 1/4 cup (50g) Pimiento, julienne
Procedure
- SAUTÉ. In a deep pan, heat olive oil. Sauté bell pepper, onions, garlic, and chorizo until dry. Mix in rice and AJI-SHIO® Garlic.
- SIMMER. Add the homemade shrimp stock, then simmer until the rice is cooked. Cover with foil.
- SAUTÉ. In a separate pan, heat olive oil. Sauté shrimp until cooked through.
- SERVE. Top rice mixture with cooked shrimp. Add olives, and sliced pimiento. Serve hot.
Cooking Tips
To make homemade shrimp stock, in a pot with water, simmer shrimp shells and head for 45 minutes to 1 hour for maximum extraction of flavor. Strain the liquid to remove the shells.
