Basic Paella

AJI-SHIO® Garlic Seasoning Mix

Ingredients

  • 2 Tbsps. (30ml) Olive Oil
  • 1/2 cup (120g) Red bell pepper, minced
  • 1/2 cup (120g) White onion, minced
  • 1/4 cup (60g) Garlic, minced
  • 1/2 cup (70g) Chorizo de Bilbao, sliced
  • 1 1/2 cups (270g) Rice, raw
  • 1/2 Tbsp. (7.5g) AJI-SHIO® Garlic Seasoning Mix
  • 1 1/2 cups (375ml) Homemade shrimp stock
  • 2 Tbsps. (30ml) Olive Oil
  • 1/4 kilo (250g) Shrimp, deveined, shell-on, head-on, cooked
  • 1/2 cup (70g) Olive, sliced
  • 1/4 cup (50g) Pimiento, julienne

Procedure

  1. SAUTÉ. In a deep pan, heat olive oil. Sauté bell pepper, onions, garlic, and chorizo until dry. Mix in rice and AJI-SHIO® Garlic.
  2. SIMMER. Add the homemade shrimp stock, then simmer until the rice is cooked. Cover with foil.
  3. SAUTÉ. In a separate pan, heat olive oil. Sauté shrimp until cooked through.
  4. SERVE. Top rice mixture with cooked shrimp. Add olives, and sliced pimiento. Serve hot.

Cooking Tips

To make homemade shrimp stock, in a pot with water, simmer shrimp shells and head for 45 minutes to 1 hour for maximum extraction of flavor. Strain the liquid to remove the shells.
