Korean Cream Cheese Garlic Buns

AJI-NO-MOTO® Umami Seasoning

Ingredients

Bun's dough:
  • 3/4 cup (150ml) Warm water
  • 1 tsp. (5g) Active dry yeast
  • 2 1/2 cups (280g) All-purpose flour
  • 2 Tbsps. (30g) White sugar
  • 1/8 tsp. (0.6g) Salt, iodized
  • 1/4 pack (2.5g) AJI-NO-MOTO® Umami Seasoning
  • 1 pc. (50g) Egg, medium
Cream cheese filling:
  • 3/4 cup (180g) Cream cheese, softened
  • 3 Tbsps. (45g) White sugar
Garlic butter sauce:
  • 1/4 cup (60g) Unsalted butter, softened
  • 1/2 cup (125ml) Milk, fresh
  • 1 Tbsp. (15g) White sugar
  • 2 1/2 Tbsps. (22.5g) Garlic, minced
  • 1 pc. (50g) Egg, medium
  • 1 Tbsp. (5g) Parsley, chopped (optional)

Procedure

  1. MIX & KNEAD. To prepare the dough, combine water and yeast in a small bowl then let it sit for 2-3 minutes. In a large mixing bowl, combine the yeast mixture, flour, sugar, salt, AJI-NO-MOTO®, and egg. Mix and knead for 15 minutes or until dough is smooth and elastic. Let it rest in a bowl covered in cling wrap or a lid for 1 hour or until doubled in size.
  2. SHAPE & BAKE. Once dough has fermented, knead for 2 minutes then divide the dough into 16 pcs. (30g each). Shape into round buns then transfer each piece to a floured baking sheet with 2-3 inches spacing between each piece. Let it proof for 20 minutes or until doubled in size. Bake the buns in a preheated oven at 190°C (375°F) for 10-15 minutes or until golden. Let it cool.
  3. MIX. To prepare the cream cheese filling, mix cream cheese and sugar until combined. Transfer to a piping bag then set aside.
  4. MELT & WHISK. To prepare the garlic butter sauce, combine butter, milk, sugar, garlic, and egg in a heat-proof bowl. Heat the mixture over a pot of simmering water until sugar is dissolved. Make sure to constantly whisk the mixture. Set aside.
  5. ASSEMBLE & SERVE. Slice the bread into quarters but not all the way through. FIll each gap with cream cheese then dip in the garlic butter sauce. Heat in the toaster for 2-3 minutes or until golden then garnish with parsley (optional).

Cooking Tips

You can use store-bought buns in making this recipe.
