Lomi (Batangas style)

PORKSAVOR® All-in-One Seasoning Mix

Ingredients

  • 2 Tbsps. (30ml) Cooking oil
  • 2 Tbsps. (20g) Onion, minced
  • 1 Tbsp. (10g) Garlic, minced
  • 1 cup (200g) Pork, lean, strips
  • 1/2 cup (90g) Kikiam, sliced
  • 1/2 cup (100g) Pork liver, strips
  • 2 liters (2000ml) Water
  • 1 pack (8g) PORKSAVOR® All-in-One Seasoning Mix
  • 1 Tbsp. (15ml) Soy sauce
  • 1/2 kilo (500g) Lomi noodles, rinsed
  • 3/4 cup (90g) Cassava starch (dissolved in:)
  • 1/2 cup + 2 tsps. (135ml) Water, cold
  • 2 pcs. (100g) Egg, beaten
  • 1/8 tsp. (1.3g) Salt, iodized
  • 1/8 tsp. (0.4g) Black pepper, ground
Garnish:
  • 10 pcs. (250g) Egg, boiled, halved
  • 1/4 cup (25g) Spring onion, chopped
  • 2 Tbsps. (10g) Garlic, toasted
Sides (optional):
  • 1/4 cup (62.5ml) Soy sauce
  • 10 pcs. (50g) Calamansi, halved
  • 6 Tbsps. (60g) Onion, chopped
  • 10 pcs. (20g) Red chili, whole

Procedure

  1. SAUTE. In a pot heat oil then saute onion and garlic until fragrant. Add pork, kikiam, and liver then cook until browned. Set aside half of the meat for toppings.
  2. SEASON & BOIL. Add water in the pot then season with PORKSAVOR® and soy sauce, cover the pot. Once the mixture is boiling add lomi noodles and cook until tender.
  3. SIMMER. Mix-in the cassava and water mixture and simmer until thickened and sticky. Add egg, salt, and pepper, then continue cooking for 5 minutes.
  4. ASSEMBLE & SERVE. Transfer lomi in a serving bowl, add egg and sprinkle with spring onion and garlic all over. Serve with soy sauce, calamansi, onion, and chili, enjoy while hot!

Cooking Tips

Marinate liver in vinegar or calamansi juice for a few minutes to remove the unpleasant smell and taste.
