Crispy Fry® Gravy Mix

Ingredients

FOR THE RUB
  • 1 whole (1260g) Whole Chicken
  • 1 tsp. (5g) Salt, iodized
  • 1 tsp. (5g) Pepper, ground
  • 1 tsp. (5g) Rosemary
FOR THE STUFFING
  • 1 tsp. (5ml) Olive Oil
  • 1 bar (225g) Butter (unsalted)
  • 1 whole (40g) Garlic, crushed
  • 1 whole (130g) White onion, quartered
  • 1 whole (56g) Lemon, halved
FOR ASSEMBLY
  • 1 tsp. (5ml) Olive Oil
  • 1 whole (56g) Lemon, halved
  • 1 whole (130g) White onion, halved
FOR GRAVY
  • 1 cup (240ml) Water
  • 1 pack (20g) Crispy Fry® Gravy Mix

Procedure

  1. PRE-HEAT. Pre-heat the oven at 350°F (175°C)
  2. SEASON. Generously rub salt, pepper, and rosemary onto the chicken's skin and inside its cavity for flavor.
  3. MIX. Combine 1 teaspoon of olive oil with softened butter. Mix until fluffy. Set aside.
  4. STUFF. Stuff the chicken's cavity with garlic cloves, onion, and lemon halves for added flavor. Carefully loosen the skin around the breast area with your fingers, taking care not to tear it. Spread softened butter under the skin, focusing on the breast and thigh areas.
  5. DRIZZLE. Drizzle olive oil on top of the chicken skin to further protect the butter from burning.
  6. ASSEMBLE. Place a layer of lemon slices and onion rings on the roasting tray to create a base, elevating the chicken for even cooking.
  7. BAKE. Place the stuffed chicken in a roasting pan and bake at 350°F (175°C) for 1 hour. Baste the chicken with pan juices every 15 minutes to keep the meat moist and the skin golden and crispy.
  8. BOIL. Prepare the gravy by dissolving Crispy Fry® Gravy Mix in 1 cup (250ml) of water. Stir thoroughly to avoid lumps and bring to a boil, cooking for 3 minutes while stirring constantly.
  9. SERVE. Take the chicken out of the oven and let it rest for 10 minutes. Carve the chicken and serve it with the Crispy Fry® Gravy Mix.

Cooking Tips

You can use the remaining chicken drippings to add depth of flavor to soups, stews, or risottos. Simply stir a spoonful of the drippings into the base of your dish for an extra savory boost. Another option is to drizzle it over roasted vegetables or mashed potatoes for added richness.
